Preparing Perfect Chestnuts

No St. Martin's Day would be complete without the traditional roasted chestnuts!
Here's a simple recipe for making them at home:
1. Wash the chestnuts and make a small cut in each one.
2. Place them on a baking tray, sprinkle with coarse salt and bake in a preheated oven at 200°C for about 30 minutes.
3. Serve while still hot and pair with SLB 49 (Alentejo), a fortified wine aged for 20 years in oak, or, for a fresh and elegant pairing, with SLB 81 rosé (Vinho Verde [young wine]).
